Learning to cook plant-based
I’ve been putting fresh spinach, kale and various green powders in my smoothies for over a decade. Serving hearty and delicious plant-based meals to a family is a completely different story. Here I share 3 resources that I’ve been using to learn how to cook, nourish and please using only plants!
 
A NEWBIE IN THE KITCHEN
As a result of 2 decades of full time existence in muscle-head gym culture (think protein shakes in blender bottles and one-pot meals on the go), I am not very savvy in the kitchen. 
Now that I have my own family I have been putting a lot of time and energy into learning how to cook and nourish my loves with as many plant-based meals as possible.
 
Thanks to these helpful books and websites about plant-based cooking I am now super impressed with myself and the delicious meals that I have been able to serve up.

I used to read Angela Liddon’s blog of the same name when I started this blog. How incredible is it that she now has a couple of New York Times best-selling plant-based cook books.  
The sweet and savory recipes are simple with easy to find ingredients. You can read my full review of her first cookbook here, the book is a great intro to a plant-based lifestyle.
 
Cauliflower mashed potatoes with easy mushroom gravy 
I seriously didn’t believe gravy could be this savory without being made from meat. Hurray for mushrooms.
 
Empowered noodle bowl with Thai peanut or Orange-maple Miso  
I am finally able to recreate some of the asian flavors I love right in my own kitchen.
 
Soul soothing African peanut stew 
My sister was right, this soup reaches the soul, everyone I have served it to has commented that it hits more than just the tastebuds.
 
 
VEGGIES SAVE THE DAY

I could eat soup every single day, and I usually do. My google searches for plant-based soups kept pulling up certified vegan nutrition coach Amy Katz’s vegan mediterranean recipes. After trying a few recipes with super success I now start my meal planning on her site.
 
Vegan corn chowder
If the kids ask for seconds it’s a keeper, especially when it is loaded full of veggies. I make a batch a few times a month. RECIPE

“I could eat these everyday” said my husband. These bite size lentil muffins are also good cold so I make extras and keep a container full of them in the fridge as a grab and go snack.RECIPE
 
Buffalo cauliflower bites
Not a lot comes to mind when I think of cauliflower dishes, so these BBQ bites were a fun and delicious way to enjoy this superfood. RECIPE
 
Chickpea curry
Made with cauliflowers and potatoes and consumed with absolutely no guilt. These ‘white’ foods are now pantry staples for their high nutrient content and healing powers and I can finally enjoy with some novel flavors. RECIPE
 
 
MEDICAL MEDIUM BOOKS AND WEBSITE

I have been following the perspective changing work of Medical Medium Anthony William for almost 5 years. The recipes in the Medical Medium books and on the blog are all made of superfoods and many of the recipes contain no oils or fats. 
 
Black bean meatballs
A trio of meatballs served on some lentil or garbanzo pasta is a nice treat for the vegan who doesn’t need their ‘meatballs’ to have beefy texture. RECIPE
